
You wouldn't go to Cancun, Rome or New Zealand without packing items appropriate for the trip -- so why should you go to the Black Temple or Karazhan any less prepared? Levenah of the World of Warcraft Livejournal community asked players, "What do you carry for a raid?" She personally slings an impressive number of potions, a good amount of weapon oil and holy candles, and what appears to be one banana.
Most of the respondents seem to carry multiple stacks of every potion and food available, which makes me feel slack -- back when I was raiding, I came with about 10 healing pots, a stack of plus agi food, and then five to ten or so of my choice offensive and defensive elixirs. Oh, and 20 of each poison and Flash Powder, and usually a small amount of the Blinding Powder that no one ever asks me to use.
I know that tanking and healing classes tend to have to bring more items than DPS -- and this isn't even counting all the various sets a druid has to carry! What's on your packing list for a raid?

tanking gear, dps gear, off tanking gear (a mix of the first 2 mostly), and healing gear. Beyond that, 40 MotW reagents, 20 battle rez seeds, 20 (if I can) of each kind of fishing food, and of course:

Usally only use at most 5 of each, mainly on maiden.
1 flask of fort, cheaper then elixirs.
1 5 charge wizard oil
4 runes of warding

That's about it.

Besides having to spend time making food and water...
40 Arcane Power (because 30 minute buffs are never good)
20 +Spelldmg food
20 Elixer of Draenic Wisdom
20 Adept's Elixer
10 Super Mana Pots
And aLways extra regs to make more pots for guildies who forgot to bring theirs (you know who you are)

I tend to keep a rolling stock of consumables and the essential gear.
For Tier 5 Raids I will generally have:
DPS Gear (Worn)
Tanking Gear (Very rarely needed)
Any Relevant Resistance Gear (Some arcane for Void Reaver for example)
60+ Raid Food (+Str Buff usually)
20+ Elixir of Major Agility
10+ Assorted Guardian Elixir
1+ Flask of Relentless Assault
20+ Major Healing Potion
Also a bag of herbs, spare Imbued Vials, a selection of random animal parts and flint/wood for emergency potion/food making.

As my mage, generally they group us with a Spriest, but as my backup
for BT/Hyjal runs I carry:
60 Arcane Powder
20 super mana
10 super health
2 spell damage oil
Stack of Flask of Pure Death
Spell damage food
5 Marks of the Illidari (for backup in case I can't get my flasks
made)
Lots of conjured water and a few croissants

Stack of Adept's Elixir (spell crit)
Runes of warding and shielding
1 or 2 Mana oils (Brilliant or Superior)
Most of it is dependent on trash pulls (mostly healing gear/food related) or bosses (mostly mp5 or spellcrit)

I raid primarily as a Holy Paladin, but swap on a moment's notice to any spec that's needed. As such, I bring a set of gear for each spec, Healing, Tanking, DPS. These things are on my person at all times.
Next, I bring the right foods. One stack of +heal food, one stack of +stamina food, and one stack of +strength food. And while I can cook everything anyone would want, and will do so at any time, I do not bring fire making. Wasted bag slots because of proper planning do not make for happy Paladins. If you want it cooked on a raid, bring your own fire.
I generally have two stacks of Mana pots and health pots. When I am healing, I will rarely use more than one or two in a 5 hour raid. Other specs require a lot more consumption.
I generally have a stack or oils too, either +mana or +spell damage. These are really less essential than most items I could bring, but they got in the bags and occasionally prove useful so they stay.
Most importantly, and I cannot stress this enough for people who want to be serious raiders... I bring enough flasks to cover the entire raiding window. If you are raiding for two hours, bring one. If you're raiding for 4 hours, bring two. You cannot consider yourself serious about raiding unless you have flasks with you. Once considered a luxury, raids are being created with the expectation of flasks these days. People who try to save flasks for bosses and end up clearing the same trash over and over should learn that harsh lesson.

1 health potion injector (this lasts longer than the mana injector)

Elixirs of Major Agility (I'm pretty sparing with these)

-Haste potions if I can find them
Using agility or strength elixirs for melee is just silly, you could use onslaught elixir for AP AND have your AGI and STR from scrolls.
